Ingredients:

  • Mexicorn – 2 cans
  • Rotel (mild or spicy) – 1 can
  • Shredded cheddar cheese – 2 cups
  • Spring onions, finely chopped – 8
  • Fresh cilantro, minced – a handful
  • Mayonnaise – 1 cup
  • Sour cream – 1 cup
  • Fritos Scoops or chips of choice – for serving

Instructions:
