Ingredients:
- For the crust and topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, chilled and cubed
- For the filling:
- 3 cups mixed berries (such as raspberries, blueberries, and blackberries)
- 1/2 cup sugar
- 2 tablespoons cornstarch
- Juice of one lemon
Directions:
- Preheat oven to 375°F (190°C) and line a 9×9 inch baking pan with parchment paper.
- Make the crust: In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Reserve 3/4 cup of the mixture for topping.
- Press the crust: Pour the remaining mixture into the prepared pan and press firmly to create an even layer.
- Prepare the filling: In a bowl, mix berries with sugar, cornstarch, and lemon juice. Spread this evenly over the crust.
- Add topping: Sprinkle the reserved crust mixture over the berries.
- Bake for 45 minutes, or until the topping is golden brown. Let cool before slicing into bars.
