Taco Spaghetti
Ingredients:
- Olive oil – 1 Tbsp
- Ground beef – 1 ½ lbs
- Uncooked spaghetti noodles – 8 oz
- Fire-roasted Rotel (diced tomatoes & green chilies) – 1 can
- Taco seasoning – 1 packet
- Tomato paste – 2 Tbsp
- Shredded taco blend cheese – 1 cup
- Water – 3 cups
- Fresh chopped tomato & green onion – for garnish
Instructions:
Step 1 – Brown the Beef: Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Add 1 ½ lbs ground beef and cook until browned, then drain any excess liquid.
Step 2 – Add the Flavors: Stir in 1 can Rotel, 1 packet taco seasoning, and 2 Tbsp tomato paste until well combined with the beef.
Step 3 – Add Pasta and Liquid: Pour in 3 cups of water. Break the 8 oz spaghetti in half and add it to the skillet. Stir, then bring to a boil.
Step 4 – Simmer: Reduce heat to medium-low, cover, and cook for 12–15 minutes, or until spaghetti is tender.
Step 5 – Add Cheese: Drain any remaining liquid, sprinkle 1 cup shredded taco blend cheese over the top, cover, and let melt for 2–3 minutes.
Step 6 – Garnish & Serve: Top with fresh chopped tomato and green onion, if desired, and enjoy!
