Long-grain rice 1 cup
Butter 4 tablespoons
Onion slices, ring shape 4 slices
Beef broth 10 ounces
Salt To taste
Pepper To taste
Instructions:
Preheat the oven to 350°F.
In a large skillet, melt 4 tablespoons of butter over medium heat.
Add 1 cup of long-grain rice to the skillet and sauté for a couple of minutes until it’s lightly toasted.
Spread the toasted rice evenly in a casserole dish.
Season 4 bone-in pork chops with salt and place them on top of the rice.
Arrange 4 slices of onion in ring shapes on top of the pork chops. Sprinkle pepper over the entire casserole.
Pour 10 ounces of beef broth over the mixture, and add around 2/3 cup of water.
Cover the casserole dish with foil or a lid and bake in the preheated oven for about 45-50 minutes, or until the rice is tender, and the pork chops are cooked through.
Check the casserole during baking, adding more beef broth if needed to keep the rice moist.
Broil for a few moments to get the pork chops brown in color.
Serve the pork chops over a bed of rice and onions, spooning some of the flavorful juices over the top.
