One pot Mexican Rice Casserole

Ingredients:

1 lb. minced meat
1 small onion, diced
Salt and pepper to taste
2 tablespoons of taco seasoning
1 teaspoon garlic powder
1 cup long grain white rice
1 1/2 cups beef broth
1 can (15 ounces) corn, drained
8 ounces of tomato sauce
1/2 cup of sauce
1 cup grated cheese

Directions:

Cook the ground beef and onions with salt and pepper to taste in a large skillet over medium-high heat until the beef is no longer pink. Drain the grease if necessary.
Return skillet to stove and sprinkle beef with garlic powder and taco seasoning.
Add rice, broth, corn, tomato sauce, and ketchup.
Bring the mixture to boil. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender.
Cover with cheese and place the lid back on the skillet for 2-3 minutes until the cheese melts.I await your comments! Enjoy!
