How to Make Old-Fashioned Seven-Minute Frosting:
Step 1: In a heatproof medium glass bowl, combine the sugar, cold water, egg whites, cream of tartar, and salt.
Step 2: Bring a pot of water to a gentle simmer. Beat the mixture on low speed for 30 seconds.
Step 3: Set the bowl over the simmering water without letting it touch the surface. Beat on high speed for 7 minutes until the mixture becomes glossy and stiff.
Step 4: Remove from heat, add the vanilla, and continue beating for 1–2 minutes until the frosting forms firm peaks and is spreadable.
Step 5: Use immediately, as the glossy finish sets quickly.
