Oh man, I cooked this for a party, and it vanished before I knew it!

These delightful Southern-style Biscuit Boombsare perfect for a quick and satisfying appetizer or side dish. Flaky homemade biscuits are filled with melty mozzarella cheese and then brushed with a garlicky herb butter for an irresistible flavor combination.

Ingredients:

Ingredient Quantity
All-Purpose Flour 2 cups
Baking Powder 1 tablespoon
Salt 1 teaspoon
Baking Soda 1/2 teaspoon
Unsalted Butter, cold and cubed 1/2 cup
Buttermilk 1 cup
Mozzarella Cheese, small cubes 12 cubes
Melted Butter 1/4 cup
Garlic Powder 1 teaspoon
Fresh Parsley, chopped 1 tablespoon

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and baking soda.

  3. Using a pastry cutter or your fingers, cut the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

  4. Pour in the buttermilk and mix gently with a spoon or spatula, just until the dough comes together. Avoid overmixing.

  5. Lightly flour a clean work surface and turn the dough out onto it. Knead the dough gently a few times to form a smooth ball.

  6. Pat the dough into a rectangular shape about 1/2 inch thick. Use a knife or bench scraper to cut the dough into 12 equal squares.

  7. Place a cube of mozzarella cheese in the center of each dough square. Fold the dough over the cheese to form a pocket, pinching the edges to seal and prevent the cheese from leaking out.

  8. Arrange the filled biscuit bombs seam-side down on the prepared baking sheet.

  9. Brush the tops of the biscuit bombs with melted butter and sprinkle them with garlic powder for added flavor.

  10. Bake the biscuit bombs for 15-18 minutes, or until golden brown and the cheese is melted and gooey in the center.

  11. Once out of the oven, brush the biscuit bombs with any remaining melted butter and sprinkle with fresh chopped parsley for a pop of color and freshness.
