Mexican Lasagna

Mexican lasagna is a delicious twist on the classic Italian dish, combining layers of tortillas, seasoned ground beef, beans, cheese, and salsa. Here’s a simple recipe to make it:Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 8-10 small corn or flour tortillas
  • 2 cups shredded Mexican cheese blend
  • Chopped fresh cilantro or green onions for garnish (optional)
  • Sour cream, guacamole, or sliced avocado for serving (optional)
    1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
    2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess grease from the skillet.
    3. Add the diced onion and minced garlic to the skillet with the cooked ground beef. Cook for 2-3 minutes, or until the onion is softened.
    4. Stir in the taco seasoning mix, black beans, corn kernels, and salsa. Cook for an additional 5 minutes, stirring occasionally, to heat through and allow the flavors to meld together. Remove from heat.
    5. Arrange a layer of tortillas on the bottom of the prepared baking dish, overlapping slightly to cover the bottom.
    6. Spread half of the ground beef mixture over the layer of tortillas.
    7. Sprinkle half of the shredded cheese over the ground beef mixture.
    8. Repeat the layers: another layer of tortillas, the remaining ground beef mixture, and the remaining shredded cheese.
    9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
    10. Remove the foil and bake for an additional 5-10 minutes, or until the top is golden brown and slightly crispy.
    11. Remove the Mexican lasagna from the oven and let it cool for a few minutes before slicing.
    12. Garnish with chopped fresh cilantro or green onions, if desired.
    13. Serve the Mexican lasagna hot, with sour cream, guacamole, or sliced avocado on the side if desired.

Enjoy your delicious Mexican lasagna, a flavorful and satisfying meal that’s perfect for any occasion!
