Homemade Mayonnaise
Ingredients:
150 ml of very cold milk
1 tablespoon minced garlic
1 tablespoon chopped green onion (chives)
3 basil leaves
1 tablespoon chopped parsley
350 ml soybean or sunflower oil
1 tablespoon lemon juice
1 teaspoon oregano
1 teaspoon full seasoning (you can use salt and pepper to taste)
Directions:
In the blender glass, add the very cold milk, chopped garlic, chopped green onion, basil leaves, chopped parsley, lemon juice, oregano and all seasoning (or salt and pepper to taste)
Close the lid of the blender tightly and start blending at low speed so that all the ingredients are properly mixed.
Once the ingredients are well combined, keep the blender running at low speed and begin pouring in the soybean oil slowly and steadily. It is important to do this gradually to achieve the proper emulsion.
Continue blending until you notice that the mixture acquires a thick and creamy consistency, similar to that of commercial mayonnaise. This process usually takes a few minutes, so be patient and make sure not to rush when adding the oil.
Taste the mayonnaise and adjust the flavor if necessary. If you prefer a more acidic mayonnaise, you can add a little more lemon juice. If you prefer more salty or a touch of spice, adjust the entire seasoning.
Once your homemade mayonnaise has the desired texture and flavor, transfer it to an airtight jar or container and store in the refrigerator. It can be kept for up to a week.I await your comments! Enjoy!
