This no-fuss side dish is pure comfort made from pantry basics. Rich,  creamy, and cheesy, it works beautifully as a cozy companion to grilled chicken, roasted veggies, or any main dish that needs a simple, satisfying side.

3-Ingredient Cheesy Rice Casserole

Ingredients

INGREDIENT AMOUNT
Uncooked white rice (long-grain or jasmine) 2 cups
Shredded cheddar  cheese (divided) 3 cups
Condensed cream of chicken or mushroom soup 2 cans (10½ oz each)

How to Make 3-Ingredient Cheesy Rice Casserole

Step 1: Prepare the Oven and Pan
Heat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with  butter or nonstick spray to prevent sticking.

Step 2: Cook the Rice
Prepare the rice according to package instructions using water only. There’s no need to season it yet. Once done, fluff gently with a fork.

Step 3: Combine Ingredients
In a large bowl, mix the hot rice with 2 cups of shredded cheddar and both cans of condensed soup. Stir until everything is well blended and the cheese starts to melt.

Step 4: Taste and Adjust
Sample the mixture and add a small amount of salt or pepper if needed, depending on your soup and cheese.

Step 5: Transfer to Baking Dish
Spread the rice mixture evenly into the prepared casserole dish.

Step 6: Add Cheese and Bake
Sprinkle the remaining 1 cup of cheddar over the top. Bake for 20–25 minutes, until the casserole is bubbling around the edges and lightly golden on top.Step 7: Let It Set
Remove from the oven and let rest for about 5 minutes before serving so it firms up slightly for easier scooping.
