Tropical Pineapple Loaf

This pineapple loaf is wonderfully simple to make and comes out perfectly moist, packed with the sweet and tangy taste of crushed pineapple. With no yeast required and minimal prep, it’s a great way to bring a tropical twist to breakfast, snacks, or tea time, offering a soft crumb and an irresistible aroma in every bite.

Ingredients

For the Loaf:

  • All-purpose flour – 1 ¾ cups
  • Baking soda – 1 teaspoon
  • Baking powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Ground cinnamon (optional) – ½ teaspoon
  • Granulated sugar – ¾ cup
  • Large eggs, room temperature – 2
  • Vanilla extract – 1 teaspoon
  • Crushed pineapple, with juice (or 1 cup fresh crushed pineapple) – 1 can (8 oz)
  • Unsalted butter, melted (or coconut oil for a tropical flavor) – ½ cup

Optional Topping:

  • Turbinado sugar (for sprinkling on top before baking)

Instructions

1. Prepare the Oven
Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper to make removing the bread easier after baking.

2. Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using). Set aside.

3. Combine the Wet Ingredients
In a large bowl, beat together the sugar, eggs, and vanilla extract until smooth. Add the melted butter (or coconut oil) and the crushed pineapple with juice. Stir until evenly combined.

4. Bring Wet and Dry Ingredients Together
Gradually fold the dry ingredients into the wet mixture. Mix just until combined—small lumps are okay and help create a tender loaf.

5. Bake the Loaf
Pour the batter into the prepared pan and smooth the top. If you like, sprinkle turbinado sugar on top for a crunchy finish. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

6. Enjoy
Slice and enjoy plain, toasted with butter, or topped with a simple glaze made from powdered sugar and a splash of pineapple juice for extra tropical flavor.
