Set the oven to 425°F.
Prepare the Pie Crusts:
Take the refrigerated pie crusts out of the package.

Dice the peaches into small pieces using a fork and knife.
Add 1 tsp of cinnamon to the filling and mix until blended.

Drop peach pie filling into the center of each pie crust circle (using a 1 tbsp cookie scoop).
Fold the crust in half, pinching edges completely.
Press the pinched edges with a fork to seal.

Beat Egg White:
In a small bowl, beat the egg white until frothy.
Bake the Pies:
Place the assembled hand pies on a parchment paper-lined baking sheet, 1 inch apart.
Bake for about 15 minutes or until browned.
Prepare the Glaze:
While the pies are baking, whisk together 2 ½ cups of powdered sugar and ¼ cup of milk until smooth.
Glaze the Pies:
Remove the cooked pies from the baking sheet.
Drop them, while still warm, into the glaze, coating them completely.
