These Slow Cooker Foil-Wrapped Potato Packets are a simple yet impressive side dish. Using the “steam-in-packet” method, each baby potato is infused with melted butter and herbs. Sealed in foil, the potatoes stay moist and tender in the slow cooker, never drying out or getting mushy. Serving them in individual packets adds a fun, rustic touch while keeping them piping hot until eaten.

5-Ingredient Slow Cooker Foil-Wrapped Potato Packets

Main Components:

  • Baby potatoes (Yukon Gold or red) — 1½ lbs
  • Unsalted butter, cut into small pieces — 4 tbsp

Seasoning:

  • Kosher salt — 1½ tsp
  • Freshly ground black pepper — 1 tsp
  • Dried seasoning blend (Italian, garlic-herb, etc.) — 1 tsp

Instructions

1. Prep & Season
Rinse and dry the potatoes. In a large bowl, toss with salt, pepper, and seasoning blend until evenly coated.

2. Add the Butter
Scatter butter pieces over the seasoned potatoes and toss again so every potato gets a touch of butter.

3. Build the Packets
Tear 4 squares of heavy-duty foil (≈12×12 in). Divide the potato mixture among them, then fold and crimp the edges tightly to seal.

4. Slow Cook
Place packets seam-side up in the slow cooker. Cook on LOW for 4–5 hours or HIGH for 2–3 hours, until potatoes are tender when pierced with a fork.

5. Serve
