
Easy Sweet Potatoes in the Microwave
Microwave Sweet Potatoes
Cooking sweet potatoes in the microwave is the quickest way to get a creamy, caramelized interior—no waiting for the oven to preheat! Rubbing the skin with olive oil and salt gives it a roasted-like texture, while fork holes let steam escape and prevent bursting. Perfect as a healthy base for a quick lunch or a simple weeknight side.
Ingredients:
- 2 sweet potatoes
- ½ tbsp olive oil
- Butter, to taste
- Salt and black pepper, to taste
Instructions:
Step 1: Clean & Prep
Wash sweet potatoes thoroughly under cold water and pat completely dry. Dry skin helps the olive oil stick and prevents over-steaming.
Step 2: Poke Holes
Use a fork to poke holes all over each potato (5–6 per side). These act as vents for steam, preventing explosions in the microwave.
Step 3: Season the Skin
Rub each potato with olive oil until glossy, then sprinkle generously with salt and pepper. The oil helps create a flavorful “crust.”
Step 4: Microwave
Place potatoes on a microwave-safe plate. Cook on HIGH for 5 minutes.
Step 5: Check & Finish
Pierce the center with a fork. If still firm, cook in 1-minute increments until soft (most medium potatoes take 6–8 minutes total).
Step 6: Slice & Serve
Carefully remove the hot potatoes. Slice lengthwise, fluff the orange flesh with a fork, and top with butter and an extra pinch of salt before serving.
