Slow Cooker Amish Poor Man’s Stew
Ingredients:

- 2 lbs russet potatoes, peeled and cut into 1-inch cubes
- 1 lb ground beef (80–85% lean)
- 1 medium yellow onion, chopped
- 1 can (10.5 oz) condensed tomato soup
- 1 cup beef broth (or water with bouillon)
- 1 tsp kosher salt
- ½ tsp black pepper
Instructions:
Step 1: Build the Base
Place the cubed potatoes in the bottom of a 4–6 quart slow cooker. Add the chopped onion, salt, and pepper evenly over the top.
Tip: Russet potatoes work best because their starch helps naturally thicken the stew as it cooks.
Step 2: Add the Beef
Crumble the raw ground beef over the potatoes in an even layer. Break it into small pieces so it cooks evenly and distributes flavor throughout.
