Crock Pot Pierogi Casserole with Kielbasa

This hearty and comforting Crock Pot Pierogi Casserole with Kielbasa is a perfect weeknight meal. It’s incredibly easy to prepare and lets your slow cooker do all the work, freeing up your time to enjoy other activities. This dish combines the classic flavors of pierogies and kielbasa with a creamy sauce and a touch of cheddar cheese for a truly satisfying and flavorful experience.

Ingredients:

Ingredient Quantity
Frozen Potato and Cheese Pierogies 1 package (16-20 oz)
Kielbasa (or Smoked Sausage) 1 lb, sliced into 1/2-inch rounds
Cream of Mushroom Soup (or Cream of Chicken) 1 can (10.5 oz)
Sour Cream 1 cup
Shredded Cheddar Cheese 1 cup
Chicken Broth 1/2 cup
Onion 1 small, finely chopped
Garlic 2 cloves, minced
Paprika 1 teaspoon (optional)
Salt To taste
Black Pepper To taste
Fresh Chopped Parsley For garnish (optional)

Instructions:

    1. Prepare the Ingredients:

      • Slice the kielbasa into 1/2-inch thick rounds.
      • Finely chop the onion and mince the garlic.
    2. Layer Ingredients in the Crock Pot:

      • Place the frozen pierogies in an even layer in the bottom of the crock pot.
      • Scatter the sliced kielbasa evenly over the pierogies.
      • Sprinkle the chopped onion and minced garlic over the kielbasa and pierogies.
    1. Make the Sauce:

      • In a medium mixing bowl, combine the cream of mushroom soup, sour cream, chicken broth, paprika (if using), and half of the shredded cheddar cheese. Stir until smooth.
      • Pour the sauce evenly over the pierogies, kielbasa, onion, and garlic in the crock pot. Gently mix to coat everything.
    2. Cook the Casserole:

      • Cover the crock pot and cook on LOW for 3-4 hours, or until the pierogies are tender and heated through and the sauce is bubbly.
  1. Add Cheese and Finish:

    • During the last 20-30 minutes of cooking, sprinkle the remaining cheddar cheese over the top of the casserole. Cover and cook until the cheese is melted and bubbly.   
    • Garnish with freshly chopped parsley if desired, and serve warm.

Cooking Notes

  • Pierogies: No need to thaw the frozen pierogies before adding them to the crock pot. They will cook perfectly in the creamy sauce.
  • Consistency: If the sauce is too thick, you can add an extra splash of chicken broth to thin it out.
