Ingredients:
For the mass:
250g bread flour
50 g unsalted butter at room temperature
3 g (1 teaspoon) salt
10 g (1 tablespoon) sugar
120ml cold water
120 g unsalted butter at room temperature (for spreading)

Strawberry jam
Chocolate Jam
Before Baking:
Egg wash (2 tablespoons eggs + 2 tablespoons milk)

Directions:
We start by softening the butter at room temperature.
In a bowl, mix the flour with the softened butter.
Add cold water, salt and sugar. Stir well until the ingredients dissolve.
Knead the resulting dough for about 3 minutes.
Cover the dough with a cloth and let it rest for 15 minutes.
Divide the dough into 4 equal parts and flatten the ends to form a square.
Stretch each square to a size of 30 cm x 25 cm.
Spread the softened butter over the dough evenly.
Fold the dough in thirds and dust it with flour.
Roll out the dough again to a length of 45cm and fold it in thirds again (3 folds, 1 time).
Repeat this process two more times, rolling out the dough, folding in thirds, and dusting with flour.
Cut the straight ends of the dough.
Divide the dough into 3 equal parts and then into 4 equal parts.
Make diagonal cuts in each section.
Brush one of the leaves with the beaten egg.
Add strawberry or chocolate jam on the sheet with egg.
Cover with another cut sheet and flatten slightly.
Brush the surface with the egg wash.
Take the dough to the preheated oven at 200°C for 10 minutes, then reduce the temperature to 180°C and bake for 20 more minutes. The time may vary depending on the oven.
