Hearty Creamy Chicken Soup with Pasta and Fresh Spinach
Ingredients:
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 pound (450g) boneless, skinless chicken breasts, diced
4 cups chicken broth
1 cup heavy cream
1 cup small pasta (like ditalini or orzo)
2 cups fresh spinach, chopped
1 teaspoon dried thyme
Salt and pepper to taste
Grated Parmesan cheese for serving
Directions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 3-4 minutes until the onion is translucent.
Add the diced chicken to the pot and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the pasta and dried thyme. Reduce the heat and let it simmer for about 10 minutes, or until the pasta is al dente.
Stir in the heavy cream and chopped spinach, cooking for an additional 2-3 minutes until the spinach is wilted and the soup is heated through.
Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
