braised beef brisket

Ingredients:

  • 3 to 4 lbs  beef  brisket
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs like thyme or rosemary (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (160°C).
  2. Sear the brisket: Season the brisket generously with salt and pepper. Heat olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side. Remove the brisket and set it aside.
  3. Cook the onions and garlic: In the same pot, add the diced onions and cook for 5 minutes until softened. Add the minced garlic and cook for another minute.
  4. Add liquids and seasoning: Stir in the tomato paste, smoked paprika, Worcestershire sauce, brown sugar, and red wine (if using). Allow the wine to reduce slightly for a few minutes. Then pour in the beef broth.
  5. Braise the brisket: Return the brisket to the pot, making sure it’s submerged in the liquid. Add fresh herbs if using. Cover the pot with a lid and transfer it to the preheated oven. Let it braise for 3-4 hours or until the brisket is tender and can be pulled apart with a fork.
  6. Rest and serve: Once the brisket is fully cooked, remove it from the oven and let it rest for about 15 minutes before slicing. Serve with the rich sauce from the pot.
