Berry Crumble Bars

Ingredients:

  • For the crust and topping:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup sugar
    • 1/4 teaspoon salt
    • 3/4 cup unsalted butter, chilled and cubed
  • For the filling:
    • 3 cups mixed berries (such as raspberries, blueberries, and blackberries)
    • 1/2 cup sugar
    • 2 tablespoons cornstarch
    • Juice of one lemon

Directions:

  1. Preheat oven to 375°F (190°C) and line a 9×9 inch baking pan with parchment paper.
  2. Make the crust: In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Reserve 3/4 cup of the mixture for topping.
  3. Press the crust: Pour the remaining mixture into the prepared pan and press firmly to create an even layer.
  4. Prepare the filling: In a bowl, mix berries with sugar, cornstarch, and lemon juice. Spread this evenly over the crust.
  5. Add topping: Sprinkle the reserved crust mixture over the berries.
  6. Bake for 45 minutes, or until the topping is golden brown. Let cool before slicing into bars.
