Apple Carrot Beef Rib Soup Recipe
Ingredients:
For the Soup:
2 tablespoons olive oil
2 pounds beef ribs (bone-in or boneless)
1 onion, chopped
3 garlic cloves, minced
2 large carrots, sliced
2 apples, peeled and chopped
1 tablespoon fresh ginger, grated
6 cups beef broth
1 teaspoon ground cinnamon
½ teaspoon ground turmeric
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 bay leaf
1 tablespoon honey (optional for sweetness)
For Garnish:
Fresh parsley or cilantro, chopped
Crusty bread, for serving
Instructions:
Brown the Beef Ribs:
Heat the olive oil in a large pot over medium-high heat. Season the beef ribs with salt and pepper. Add the ribs to the pot and brown on all sides, about 5-7 minutes. Remove the ribs and set aside.
Sauté the Aromatics:
In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and softened.
Combine the Ingredients:
Add the carrots, chopped apples, grated ginger, beef broth, cinnamon, turmeric, salt, pepper, and bay leaf to the pot. Stir to combine.
Cook the Soup:
Return the beef ribs to the pot, ensuring they are submerged in the broth. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1.5-2 hours, or until the beef is tender and falls off the bone.
Optional Sweetness:
If desired, stir in honey for a hint of sweetness to balance the flavors.
Serve:
Once the beef is tender, remove the ribs and discard the bones. Ladle the soup into bowls, top with fresh parsley or cilantro, and serve with crusty bread. Enjoy this flavorful, hearty apple carrot beef rib soup!
