Corn and Cheese Fritters

INGREDIENT QUANTITY
All-Purpose Flour 1 cup
Cornmeal 1/2 cup
Baking Powder 1/2 tsp
Salt 1/4 tsp
Black Pepper 1/4 tsp
Grated Parmesan Cheese 1/4 cup
Green Onions, finely chopped 1/4 cup
Corn Kernels (fresh or frozen) 1/2 cup
Large Egg 1
Milk 1/4 cup
Vegetable Oil for frying 1/4 cup
Grated Cheddar Cheese Optional for garnish

Instructions:

  • In a medium mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, Parmesan, green onions, corn kernels, egg, milk, and vegetable oil.
  • Stir in corn kernels until well combined. Heat oil in a skillet on medium-high heat.
  • Using a spoon or a small ice cream scoop, place spoonfuls of dough into the hot oil.
  • Fry the fritters for 2 to 3 minutes per side or until golden brown and crispy.
  • Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
  • Serve the hot fritters with a side of dipping sauce or on a baking sheet lined with paper towels to drain any excess oil.
