Fluffy Garlic Buns

Ingredients:

250 ml of lukewarm water
2 tablespoons of sugar
1 teaspoon dry yeast
2 teaspoons of salt
1 tablespoon olive oil
370 grams of flour

To Brush Them:
50ml olive oil
4 garlic cloves
5 sprigs of parsley
4 sprigs of thyme
100 g grated Parmesan cheese

Directions:

In a small bowl, add some of the allotted warm water and sugar. Add the dry yeast and stir gently. Add a teaspoon of flour, mix and let stand, covered, for about 10 minutes until the mixture begins to foam.
In a large bowl add the flour, yeast mixture and oil. Mix everything until the dough begins to form.
Knead the dough on a floured surface for about 10-12 minutes, or until it’s smooth, elastic, and doesn’t stick to your hands.
Return the dough to the bowl, cover it with a clean, damp cloth, and let the dough rest and rise in a warm place for about 1 hour or until it has doubled in size.
After the dough has doubled in size, divide it into walnut-sized portions.
Shape each portion into a small ball and place on a parchment lined or lightly greased baking sheet, leaving space between each so they can expand as they bake.

Preparing the Garlic and Parmesan Brush:
In a food processor, combine the olive oil, garlic cloves, parsley, and thyme. Process until you get a mixture of herbs and garlic. If you don’t have a processor, chop everything very small.
Generously brush each bun with this aromatic blend of herbs and garlic.
Sprinkle each bun with grated Parmesan cheese.
Preheat your oven to 200°C (390°F).
Bake the buns in the preheated oven for 15-20 minutes, or until golden.
Remove the buns from the oven and let them cool on a wire rack for a few minutes before serving. If you want, you can brush them with butter.
