Low-Carb  Cheese Olive Bites

Ingredients:

  • Sharp cheddar cheese (finely shredded) — 1 cup
  • Parmesan cheese (finely grated) — ¾ cup
  • Green olives (pitted and drained) — 1 cup

Step-by-Step Directions:

Step 1: Prepare the Olives
Preheat the oven to 375°F and line a baking sheet with aluminum foil. Drain the olives thoroughly and spread them on a clean kitchen towel to remove excess moisture.

Tip: Drying the olives completely is essential. Any moisture can create steam during baking, which may prevent the cheese from properly adhering and holding its shape.

Step 2: Mix the Cheese
In a bowl, combine the shredded cheddar and grated Parmesan. Mix well, using your hands if needed—the mixture should feel slightly tacky and hold together when pressed.

Step 3: Form the Bites

Tip: As they cool, the cheese firms up into a crisp shell. Moving them too soon may cause them to fall apart, but after resting, they become firm and easy to pick up.
