My neighbor served these at every block party. Just 3 ingredients for a salty, melty appetizer that tastes incredibly gourmet.

These low-carb  cheese olive bites are a simple yet flavorful keto-friendly snack, delivering a bold salty-savory bite reminiscent of gourmet stuffed olives—without any flour or fillers. A blend of finely shredded sharp cheddar and grated Parmesan forms a crisp, lacy coating that melts and wraps around each pitted green olive. As they bake, the cheese turns golden and crunchy on the outside while locking in a warm, briny center for a rich,  buttery finish.

Low-Carb  Cheese Olive Bites

Ingredients:

  • Sharp cheddar cheese (finely shredded) — 1 cup
  • Parmesan cheese (finely grated) — ¾ cup
  • Green olives (pitted and drained) — 1 cup

Step-by-Step Directions:

Step 1: Prepare the Olives
Preheat the oven to 375°F and line a baking sheet with aluminum foil. Drain the olives thoroughly and spread them on a clean kitchen towel to remove excess moisture.

Tip: Drying the olives completely is essential. Any moisture can create steam during baking, which may prevent the cheese from properly adhering and holding its shape.

Step 2: Mix the Cheese
In a bowl, combine the shredded cheddar and grated Parmesan. Mix well, using your hands if needed—the mixture should feel slightly tacky and hold together when pressed.

Step 3: Form the Bites
Scoop about 1 tablespoon of the cheese mixture and flatten it into a small round. Place an olive in the center, then wrap the cheese around it, rolling gently into a smooth ball. Make sure the olive is fully covered to avoid leakage during baking.

Step 4: Bake
Place the bites on the prepared baking sheet with space between each one. Bake for 12–16 minutes, until the cheese is bubbling and the edges turn golden brown.

Step 5: Rest Before Serving
Let the bites cool on the tray for 3–5 minutes before handling.

Tip: As they cool, the cheese firms up into a crisp shell. Moving them too soon may cause them to fall apart, but after resting, they become firm and easy to pick up.
