Crispy Potato Pancakes – Perfect Recipe

These hearty potato pancakes combine frozen potatoes with crispy bacon for a quick and delicious meal. Frying them in bacon drippings adds a rich, smoky flavor that makes each bite extra satisfying.

Perfect Potato Pancakes

Ingredients:

Frozen potatoes (hash browns) 4 cups
Bacon slices 5
Eggs, beaten 2
Onion powder 1/2 teaspoon
Salt 1/2 teaspoon
Black pepper 1/2 teaspoon
Grated cheddar  cheese 1/2 teaspoon

Instructions:

Step 1: Cook the Bacon
Place the bacon slices in a large skillet over medium heat. Cook until tender and crispy, about 10 minutes, flipping occasionally.

Step 2: Prep the Bacon
Remove the cooked bacon and crumble it into small pieces. Keep the bacon drippings in the skillet to fry the pancakes later.

Step 3: Make the Pancake Mixture
In a large bowl, mix the frozen potatoes, beaten eggs, onion powder, salt, and black pepper. Stir in the crumbled bacon and grated cheese until everything is well combined.

Step 4: Shape the Pancakes
Divide the mixture into 8 equal portions and shape each into a small patty.

Step 5: Fry
Heat the reserved bacon drippings over medium heat. Fry the potato pancakes in batches for about 4 minutes per side, until golden brown and crispy.Step 6: Serve
