How To Make Cowboy Casserole:
- Step 1: Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Step 2: Cook Ground Beef: In a large skillet over medium-high heat, cook the ground beef until browned and broken apart. Drain any excess fat.
- Step 3: Add Onion and Garlic: Add the chopped onion to the skillet and cook until softened. Stir in the minced garlic and cook until fragrant (about 1 minute).
- Step 4: Combine Ingredients: Stir in the cream of mushroom soup, sour cream, frozen corn, smoked paprika, salt, and black pepper. Cook until combined and heated through. Remove from heat.
- Step 5: Assemble Casserole: Transfer the beef mixture to the greased 9×13-inch baking dish. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture. Arrange the tater tots in an even layer over the top.
- Step 6: Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
- Step 7: Add Cheese: Remove the casserole from the oven and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
- Step 8: Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley, if desired, and serve warm.
