Ingredients:

8-inch flour tortillas 3
Lean ground beef 1 pound
Onion, finely chopped 1/2
Taco seasoning packet 1 packet
Water 1/2 cup
Black beans, drained and rinsed 15 oz can
Diced tomatoes with green chiles 10 oz can
Sour cream 1/2 cup
Shredded Mexican cheese blend 2 cups

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef and finely chopped onion until the beef is cooked through, about 5-6 minutes. Drain any excess fat.
  3. Add the taco seasoning packet, water, and drained and rinsed black beans to the skillet. Simmer for about 2 minutes, or until the sauce has thickened slightly.In a separate bowl, mix together the diced tomatoes with green chiles and the sour cream.
    • Spray an 8-inch baking pan with nonstick cooking spray. Place one of the flour tortillas in the bottom of the pan.
    • Layer half of the beef mixture over the tortilla, followed by half of the tomato-sour cream sauce, and then one-third of the shredded Mexican cheese blend.
    • Repeat the layers, starting with another tortilla, the remaining beef mixture, the remaining sauce, and another one-third of the cheese.
    • Top with the final third of the cheese.
    • Cover the baking pan with foil and bake for 30-40 minutes, or until the casserole is hot and bubbly.
    • Remove the foil and bake for an additional 5 minutes, or until the cheese is lightly browned.
    • Let the casserole stand for 5 minutes before serving.
    • Top with your desired toppings, such as extra sour cream, guacamole, or salsa.
