
Chicken and Broccoli Pasta
Ingredients:
• 1 lb cooked chicken, shredded or diced
• 12 oz penne or rotini pasta
• 4 cups broccoli florets
• 2 cups chicken broth
• 1 cup heavy cream
• 1 cup grated Parmesan cheese
• 2 tbsp olive oil
• 2 cloves garlic, minced
• Salt and pepper, to taste
• Red pepper flakes (optional, for heat)
• Lemon zest (optional, for garnish)
Instructions:
1. Cook the Pasta & Broccoli:
◦ Bring a large pot of salted water to a boil. Cook pasta according to package instructions.
◦ Add broccoli florets during the last 3-4 minutes of cooking. Drain and set aside.
2. Sauté the Garlic & Chicken:
◦ In a large skillet, heat olive oil over medium heat.
◦ Add minced garlic and sauté for about 1 minute until fragrant.
◦ Stir in the cooked chicken and season with salt, pepper, and red pepper flakes (if using).
◦ Cook for 2-3 minutes to heat the chicken through.
3. Make the Sauce:
◦ Pour in the chicken broth and heavy cream, stirring well.
◦ Bring the mixture to a gentle simmer, letting it cook for a few minutes.
◦ Stir in the grated Parmesan cheese until the sauce becomes creamy and smooth.
4. Combine & Serve:
◦ Add the cooked pasta and broccoli to the skillet, tossing everything together until evenly coated with the sauce.
◦ Serve warm, garnished with lemon zest if desired.
