
Cabbage & Ground Beef Bake
Ingredients:
500g ground beef (or turkey for a lighter option)
1 medium onion, diced
2 cloves garlic, minced
1 medium head of cabbage, chopped (about 6 cups)
1 can (400g) diced tomatoes
200ml tomato sauce (or passata)
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon smoked paprika (optional)
Salt & black pepper, to taste
150g cooked rice (optional, for a heartier dish)
150g shredded cheese (cheddar, mozzarella, or a mix)
Directions:
Preheat oven to 180°C (350°F). Lightly grease a baking dish.
Cook the beef: In a large pan over medium heat, sauté the diced onion until softened (about 3 minutes). Add the garlic and cook for 30 seconds. Then, add the ground beef, breaking it apart with a spatula, and cook until browned. Season with salt, pepper, oregano, thyme, and smoked paprika.
Add tomatoes & cabbage: Stir in the diced tomatoes and tomato sauce. Add the chopped cabbage and mix well. Cover and let it simmer for about 10 minutes until the cabbage softens slightly.
Layer the bake: If using rice, spread it evenly at the bottom of the greased baking dish. Pour the beef and cabbage mixture over the rice, spreading it evenly.
Bake & cheese it up: Sprinkle the shredded cheese on top and bake for 20-25 minutes, until the cheese is bubbly and golden.
Serve & enjoy! Let it rest for 5 minutes before serving. Enjoy warm!
