Honey Mustard Chicken with Roasted Asparagus and Cheese

Ingredients:


chicken breast – 4 units
honey – 4 tablespoons
Dijon mustard – 3 tablespoons
garlic – 2 teeth, chopped
asparagus – 500 g
Potatoes – 4 medium units
olive oil – 3 tablespoons.
-cheese (can be mozzarella or cheddar) – 150 g, grated

Instructions:


1. Prepare the potatoes: Preheat the oven to 200 ° C. Wash and peel the potatoes, then cut them into cubes. Place the potatoes in a baking tray, sprinkle with 2 tablespoons olive oil, salt and pepper to taste. Mix well and bake for 25-30 minutes or until golden brown and tender.

2. Prepare the chicken: In a bowl, mix honey, Dijon mustard and minced garlic. Add salt and black pepper to taste. Place the chicken breasts in a baking tray and pour the honey and mustard mixture over them, making sure you cover each piece well.

3. Roast Asparagus: Wash the asparagus and cut the hard parts. Place them in another baking tray, spray with 1 tsp olive oil, salt and pepper. Mix well to soak up.

4. Chicken and Asparagus Bake: Once the potatoes have been in the oven for 15 minutes, add the tray with the chicken and asparagus to the oven. Bake all together for 20-25 minutes, or until the chicken is well cooked (the internal temperature should reach 75°C) and the asparagus is tender.

5. Add cheese: For the last 5 minutes of cooking, sprinkle grated cheese over asparagus to melt.

6. Serve: Once everything is cooked, remove from oven. Serve chicken breasts with honey mustard sauce, come with grilled asparagus with cheese and golden potatoes. Enjoy this delicious dish full of flavor and color.
