Pepper Steak with Bell Peppers and Onions 🥩🧅🌶️
Ingredients
1.5 lbs (680g) beef sirloin or flank steak, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
1 tsp baking soda (optional, for tenderizing)
3 tbsp vegetable oil (for frying)
1 large onion, cut into chunks
1 green bell pepper, cut into chunks
1 red bell pepper, cut into chunks
4 cloves garlic, minced
1 tsp freshly ground black pepper
1 tbsp sugar
1/4 cup water or beef broth
For the Sauce:
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp cornstarch (mixed in 2 tbsp water)
1 tsp sesame oil (optional)
Instructions
1. Prepare the Beef
In a bowl, combine sliced steak with soy sauce, oyster sauce, cornstarch, and baking soda (if using). Mix well and let marinate for at least 15 minutes.
2. Cook the Vegetables
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the onion and bell peppers. Stir-fry for 2-3 minutes until slightly tender but still crisp. Remove and set aside.
3. Cook the Beef
Add the remaining oil to the skillet. Turn the heat to high.
Add the marinated beef in a single layer. Sear for 1-2 minutes on each side until browned and cooked through. Stir in minced garlic and cook for 30 more seconds.
4. Combine Everything
Return the cooked vegetables to the skillet with the beef.
Add black pepper, sugar, and water (or broth). Toss everything together.
5. Add Sauce
Stir in the prepared sauce (soy sauce, oyster sauce, and cornstarch mixture). Cook for another 1-2 minutes until the sauce thickens and coats everything.
6. Serve
Remove from heat and drizzle with sesame oil if desired. Serve hot over steamed rice.
Tips:
Tenderizing Beef: Adding a pinch of baking soda helps keep the beef tender and juicy.
Adjust Heat: For a spicier version, add sliced chili peppers or a pinch of chili flakes.
Thicker Sauce: If you prefer a thicker sauce, add a bit more cornstarch slurry.
