Cabbage soup
Ingredients:
1 large cabbage, chopped
2 small onions, diced
2 cans of stewed tomatoes (14.5 oz each)
3 large carrots, sliced
2 celery stalks, sliced
1 bell pepper, diced
4 cups vegetable or chicken broth (or water for a lighter version)
1-2 cloves garlic, minced
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
Optional: 1 teaspoon Italian seasoning or a bay leaf for extra flavor
Instructions:
1. Prepare the vegetables: Chop the cabbage, carrots, celery, and bell pepper, and dice the onions.
2. Sauté the onions and garlic: In a large pot, heat a bit of olive oil over medium heat. Add the diced onions and garlic, cooking until they soften (about 3-4 minutes).
3. Add the remaining ingredients: Add the chopped cabbage, stewed tomatoes, carrots, celery, bell pepper, broth, salt, pepper, and any additional seasoning (like Italian seasoning or bay leaf) to the pot.
4. Bring to a boil: Increase the heat to high and bring the soup to a boil.
5. Simmer: Once boiling, reduce the heat to low and cover. Let the soup simmer for 25-30 minutes, or until the vegetables are tender.
6. Adjust seasoning: Taste the soup and add more salt, pepper, or seasoning if needed.
